the name refers to the ancient tower known as “nuraghe”, present in our territory it’s the symbol designed into the cossu logo. They are typical towers of Sardinia, diffuse all over the island since the bronze age. “Rugiada” to exalt its freshness being ready to eat just after one day of maturation

this cheese is produced exclusively from sheep’s milk following a specific cheese making process that allows to obtain the soft curd which gets shaped into Pecorino moulds

It’s one of our specialty refined along the years, The flavor of Sardo Fresco Cossu is pleasantly delicate with a sweeter profile. the consistency is very soft
